Besides the Gjetost cheese that .M. introduced me to I had a while back there are many I can mention. My current favorite cheese is a Pesto/Pine Nut Brie that I had a few weeks ago.

Mine has to be Gjetost with Aventinus which is a German Hefedunkel or dark unfiltered wheat beer. -

although really stinky stinky unpasteurized (i think thats what it is un-, in europe where there are not the same laws as in US for cheese production) brie is hard to beat...
